La courge spaghetti est une courge un peu spéciale, qui ne doit pas son nom au hasard : sa chair jaune pâle, une fois cuite, est très filamenteuse, au point qu'on la surnomme "spaghetti végétal". La courge spaghetti, comme toutes les courges d'hiver, est un légume léger en calories : à peine 40kcal pour 100g de courge cuite ! Sa teneur en glucides est plutôt modérée (9g pour 100g de chair cuite, dont 2g de fibres), et elle ne contient quasiment aucun lipide. Sa principale richesse nutritionnelle est qu'elle renferme du béta-carotène (qui lui donne sa couleur jaune), un précurseur de la vitamine A. Elle est en outre source de divers minéraux et oligo-éléments (fer, cuivre, manganèse) et d'autres vitamines : B2, B5, B6, B9, C et K.
