Sauce (22 %) : eau, extraits de pied de bœuf et de jarret de porc, extraits de légumes (poireau, céleri, carotte, oignon), extrait d'aromates (herbes de Provence, baie de genièvre, clou de girofle), piment, sel, poivre noir, dextrose, sucre. Sauce (22%): water, extracts of beef stalks and pork shanks, vegetable extracts (leek, celery, carrot, onion), herbs extract (herbes de Provence, juniper berry, clove), pepper, salt, black pepper, dextrose, sugar. Carrots (4%).

Les tripoux sont préparés avec de la tripe de veau coupée, garnie de morceaux plus petits de panse puis roulée dans une panse de mouton (souvent de l'agneau) et attachée avec du boyau fin ou une ficelle. Leur cuisson se fait pendant plus de quatre heures dans un fond de veau, salé, poivré, aromatisé de vin blanc, avec carottes et tomates.
