J'ai imaginé d'associer du canard confit fondant et savoureux, rehaussé d'un filet de Madère, de coriandre, d'oignons et de champignons, à la douceur d'une purée de pommes de terre à la crème fraîche. J'ai recouvert ce plat d'emmental pour obtenir un Parmentier doré et croustillant après réchauffage au four. Joël Robuchon

I believe one of Joel Robluchon's main claim to fame is his perfecting of mashed potato. So added to duck confit it is superb. I give it to friends of mine as a present& it is universally admired.
