Renseignements pratiques:
Riche en fer et en magnésium, le gingembre est un "nettoyant" efficace, grâce à ses qualités diurétiques, qui luttent contre la rétention d'eau. Fraîchement coupé et infusé dans une tasse d'eau chaude, il favorise aussi la digestion, calme les nausées. Vitamine A et B il calme les nausées matinales des débuts de grossesse. Comme d'autres épices, on lui prête des vertus aphrodisiaques....

Conservation
Il se conserve enveloppé dans une serviette en, papier en bas de votre réfrigérateur (pas dans le tiroir à légumes trop humide). Se conserve 8 à 15 jours à température ambiante frais, épluché, râpé ou en tranche, il se congèle très bien. Dans un bocal, recouvert de xérès ou de brandy fermé et réfrigéré, il se garde pour ainsi dire indéfiniment.
