Mimolette is a cheese traditionally produced around the city of Lille, France. It was originally made by the request of Louis XIV. This Mimolette is aged for 6 months to give it Time to develop its fruity notes and firm and creamy texture. During ripening the Mimolette is placed in the cellar on wooden shelves where it enjoys special care.
