Andouillette is a coarse-grained smoked tripe sausage made with pork, chitterlings, pepper,wine, onions, and seasonings. The texture is somewhat rougher than sausages, as the content is roughly cut. Primarily pan-fried, it can also be barbecued or grilled. It goes very well with a variety of mustards.

Very good - not as pungent or strong as others, but they do have a good flavour and are probably ideal if (like me) you have a spouse who isn't wild about them in the first place and you don't want to cook him/her out of the house.

I love them! Cook on a low heat or in an airfryer to minimise risk of splitting. Add a splash of dry white wine and shallots to complete the dish. A good mustard will give it a lift.
