La Mozzarella di Bufala Campana ou de bufflonne est une Appellation d'Origine Contrôlée (AOC), elle est fabriquée en Campanie à partir de lait cru de bufflonnes d%u2019eau à robe noire. D'une qualité exceptionnelle, les boules de Mozzarella di Bufala Casa Azzurra possèdent une fine croûte un peu ferme qui confine un coeur crémeux. Le lait de la bufflonne lui confère des saveurs généreuses et typiques. La mozzarella ne nécessite pas de temps d'affinage et peut être consommée immédiatement après sa fabrication, la saumure dans laquelle nous la trouvons lui permet une conservation dans des conditions optimales.
