This Cow's milk cheese from the Auvergne is wrapped around with ribbon in segments and is made in the Vallée de la Dore. Like the other Gaperon cheeses it is flavoured with garlic and pepper, but this one is matured for up to 2 months in natural caves which enhances its rind with a bloom.
