Pasteurised goat's milk 45% Petit Billy is bright white goat milk cheese from the Loire Valley. If you purchase it very young you may want to let it age a few days. As the cheese ages its flavor will become more intense and you may notice spots of blue mold, do not worry this is a normal process, just scrape it off and enjoy. Petit Billy is an ideal starter for a cheese plate or sampling party.
