Origin France Category 1 Calibre 12/16 White asparagus is a special vegetable. It is much harder to grow than other varieties of asparagus. This is because it has to stay protected from the sun during growing. The asparagus has to be constantly re-covered with soil so it can grow only in darkness. Good quality white asparagus will be quite thick, the thicker it is the more tender it should be. The tips should be nice and firm with a round smooth stalk.
